2 ripe peaches, diced

3. Topping:

Extra mixed berries

Fresh peach slices

Mint leaves (for garnish)

Prepare the crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press mixture firmly into the bottom of a springform pan to form an even crust.

    Make the filling: In a large bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add powdered sugar and vanilla extract, mixing until fully incorporated.

      Whip the cream: In another bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
