1 ½ cups crushed graham crackers

½ cup unsalted butter, melted

¼ cup granulated sugar

1 (8 oz) package cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup fresh strawberries, pureed

Additional strawberries for topping

Whipped cream for garnish (optional)

Prepare the crust: In a mixing bowl, combine the crushed graham crackers, melted butter, and granulated sugar. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Refrigerate while preparing the cheesecake filling.

    Make the filling: In a separate bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and mix until fully combined.

      Whip the cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
