Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 cup powdered sugar

8 oz cream cheese, softened

1 tsp vanilla extract

1 cup heavy whipping cream

2 cups fresh blueberries

¼ cup granulated sugar (for blueberry topping)

1 tbsp lemon juice

1 cup sour cream

Instructions
 

In a mixing bowl, combine the graham cracker crumbs and melted butter until evenly mixed. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

    In another bowl, beat together the sugar and cream cheese until smooth. Add the vanilla extract and mix until well incorporated.

      In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.

        Carefully spread the cream cheese filling over the cooled crust in the springform pan. Smooth the top with a spatula.

          For the blueberry topping, combine the blueberries, granulated sugar, and lemon juice in a saucepan over medium heat. Cook until the blueberries start to break down (about 5-7 minutes). Let it cool.

            Once the blueberry mixture is cool, pour it over the cheesecake layer and spread evenly.

              Refrigerate the cheesecake for at least 4 hours, or overnight for best results, before removing the sides of the springform pan.

                Slice and serve chilled, adding extra blueberries on top if desired.
