200g digestive biscuits

100g unsalted butter, melted

400g cream cheese

100g icing sugar

1 teaspoon vanilla extract

300ml double cream

2 ripe bananas, sliced

300g dulce de leche

Chocolate shavings (for garnish)

Instructions
 

Prepare the base: Crush the digestive biscuits in a bowl, then mix with melted butter until well combined. Press the mixture into the base of a springform tin to create an even layer.

    Make the filling: In a separate bowl, beat together the cream cheese, icing sugar, and vanilla extract until smooth.

      Whip the cream: In another bowl, whip the double cream until it holds soft peaks, then gently fold it into the cream cheese mixture.

        Layer the cheesecake: Spoon half of the cream mixture over the biscuit base. Add a layer of sliced bananas and a generous coating of dulce de leche. Spread the remaining cream mixture on top.

          Chill: Refrigerate the cheesecake for at least 4 hours or until set.
