Monterey Chicken One Pan Orzo Recipe

Ingredients
  

2 boneless, skinless chicken breasts

1 cup orzo pasta

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1/2 cup cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 cups chicken broth

1 tablespoon olive oil

Fresh basil, for garnish

Instructions
 

Heat olive oil in a large pan over medium heat.

    Season the chicken breasts with garlic powder, onion powder, salt, and pepper.

      Add the chicken to the pan and cook until browned on both sides, about 5-7 minutes. Remove from pan and set aside.

        In the same pan, add the orzo and toast for 1-2 minutes before pouring in the chicken broth.

          Bring to a simmer, then add the cherry tomatoes and spinach. Stir well.

            Once the orzo is almost al dente, return the chicken to the pan. Cook until the chicken is cooked through and the liquid is absorbed.

              Sprinkle the shredded cheddar and mozzarella cheeses on top and cover until melted.

                Garnish with fresh basil before serving.
