Ingredients
  

4 cups fresh corn kernels (or 4 ears of corn, grilled and cut off the cob)

1/2 cup cotija cheese, crumbled

1/4 cup mayonnaise

1/4 cup sour cream

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/4 teaspoon salt (or to taste)

1/4 cup fresh cilantro, chopped

1/4 cup red onion, finely chopped

1 jalapeño, seeded and diced (optional)

Lime wedges for serving

Instructions
 

If using fresh corn, grill the corn on a barbecue or stovetop grill until charred and tender. Allow it to cool and then cut the kernels off the cob.

    In a large mixing bowl, combine the corn, cotija cheese, mayonnaise, sour cream, lime juice, chili powder, garlic powder, and salt.

      Gently mix until all ingredients are well combined.

        Fold in the chopped cilantro, red onion, and diced jalapeño (if using).

          Taste and adjust seasoning with more salt or lime juice, if desired.

            Chill the salad in the refrigerator for at least 30 minutes before serving for the flavors to meld.

              Serve chilled or at room temperature with lime wedges on the side.
