Ingredients

1 lb flank steak or skirt steak

2 tablespoons olive oil

2 cloves garlic, minced

Juice of 2 limes

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

4 bolillo rolls or sandwich baguette

1 cup sliced avocado

1 cup pico de gallo

1 cup shredded lettuce

Optional toppings: sliced jalapeños, cilantro, and queso fresco

Instructions

In a bowl, combine olive oil, minced garlic, lime juice, cumin, chili powder, salt, and pepper.

Marinate the steak in the mixture for at least 30 minutes (or up to overnight).

Preheat a grill or skillet over medium-high heat.

Grill the marinated steak for about 5-7 minutes on each side, or until it reaches your desired doneness.

Let the steak rest for a few minutes before slicing it against the grain into thin strips.

Slice the bolillo rolls in half and lightly toast them if desired.

Layer the sliced steak, avocado, pico de gallo, and shredded lettuce onto the rolls.

Add any optional toppings you like, then close the sandwich and enjoy!
