Ingredients
  

1 zucchini, sliced

1 bell pepper, chopped

1 red onion, sliced

1 eggplant, cubed

2 cups cherry tomatoes, halved

3 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the sliced zucchini, chopped bell pepper, sliced red onion, cubed eggplant, and halved cherry tomatoes.

      Add minced garlic, olive oil, dried oregano, dried basil, salt, and pepper to the vegetables. Toss until all vegetables are well-coated.

        Spread the vegetable mixture evenly on a large baking sheet lined with parchment paper.

          Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.

            Remove from the oven and let cool for a few minutes before garnishing with fresh parsley.
