1 lb ground chicken

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

½ cup diced tomatoes

½ cup cucumber, diced

½ cup red bell pepper, diced

¼ cup Kalamata olives, pitted and chopped

¼ cup feta cheese, crumbled

4 whole wheat pita pockets

Fresh parsley for garnish

Tzatziki sauce (optional)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.

        Sprinkle in the cumin, smoked paprika, salt, and pepper. Mix well to combine.

          Remove the skillet from heat and stir in the diced tomatoes, cucumber, red bell pepper, and Kalamata olives.

            Warm the pita pockets in a separate pan or in the oven for a few minutes.

              Spoon the chicken mixture into each pita pocket. Top with crumbled feta cheese and fresh parsley.

                Drizzle with tzatziki sauce, if desired, and serve immediately.
