Ingredients
  

1 lb chicken breast, diced

1 cup orzo pasta

2 cups chicken broth

1 cup cherry tomatoes, halved

1 cup spinach, roughly chopped

1/2 cup Kalamata olives, pitted and sliced

1/3 cup feta cheese, crumbled

3 cloves garlic, minced

1 medium onion, diced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, oregano, and basil. Sauté until the chicken is cooked through and golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Cook the Aromatics: In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant.

      Cook the Orzo: Add the orzo to the skillet and stir to coat in the oil. Pour in the chicken broth and bring to a boil. Reduce heat to a simmer, cover, and cook for about 10-12 minutes or until the orzo is al dente and the liquid is mostly absorbed.

        Add Vegetables: Stir in the cherry tomatoes, spinach, and Kalamata olives. Cook for an additional 5 minutes, until the spinach has wilted and the tomatoes have softened.

          Combine Ingredients: Return the cooked chicken to the skillet and mix everything thoroughly. Sprinkle with crumbled feta cheese and stir gently to combine.

            Serve: Remove from heat and garnish with fresh parsley and lemon wedges. Serve warm and enjoy the vibrant flavors of the Mediterranean!
