Ingredients
  

200g feta cheese, crumbled

4 large eggs

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and halved

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Salt and pepper to taste

Crusty bread, for serving

Instructions
 

Preheat your oven to 400°F (200°C).

    In a baking dish, combine the cherry tomatoes, Kalamata olives, and olive oil. Toss to coat the tomatoes and olives evenly with the oil.

      Sprinkle the crumbled feta cheese over the tomatoes and olives. Use a spoon to create four small wells in the cheese for the eggs to sit.

        Crack an egg into each of the wells. Be careful not to break the yolks.

          Season the entire dish with oregano, red pepper flakes (if using), salt, and pepper to taste.

            Bake in the preheated oven for 20-25 minutes or until the egg whites are set, but the yolks are still slightly runny.

              Remove from the oven and sprinkle with fresh chopped parsley for garnish.

                Serve warm with crusty bread for dipping.
