Ingredients
  

2 lbs chicken breasts

1 cup cherry tomatoes

1 bell pepper (any color, diced)

1 medium onion (chopped)

4 cloves garlic (minced)

1/4 cup fresh basil (chopped)

1/4 cup balsamic vinegar

3 tablespoons olive oil

Salt and pepper to taste

Optional: Grated Parmesan cheese for serving

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large bowl, combine the balsamic vinegar, olive oil, minced garlic, salt, and pepper.

      Add the chicken breasts to the bowl and coat them well with the marinade. Let it sit for about 15 minutes.

        While the chicken is marinating, prepare a baking dish and spread the chopped onions, bell peppers, and cherry tomatoes evenly at the bottom.

          Place the marinated chicken breasts on top of the vegetable layer in the baking dish.

            Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and no longer pink inside.

              Once out of the oven, sprinkle the fresh basil on top and, if desired, add grated Parmesan cheese.

                Serve the meal hot with a side of crusty bread or over a bed of rice.
