1 lb boneless, skinless chicken breasts

4 cups chicken broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 ribs celery, diced

1 cup frozen peas

1 tsp dried thyme

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped (for garnish)

Sauté Vegetables: In a large pot, heat the olive oil and butter over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Cook Chicken: Season your chicken breasts with salt, pepper, thyme, oregano, and paprika. Add them to the pot and cook for about 5-6 minutes per side, until lightly browned and cooked through. Remove the chicken, shred it with two forks, and set aside.

      Create the Base: Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to a simmer. Add the heavy cream and stir until combined.

        Combine: Return the shredded chicken to the pot along with the frozen peas. Allow the soup to simmer for an additional 10-15 minutes to let the flavors meld together. Adjust seasoning with salt and pepper as needed.
