Ingredients
  

4 boneless, skinless chicken thighs

1 cup orzo pasta

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1/2 cup heavy cream

1 cup chicken broth

1 cup Parmesan cheese, grated

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Fresh basil leaves, for garnish

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt, pepper, and Italian seasoning. Add red pepper flakes if you prefer a bit of heat.

    Sear the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken thighs and cook for about 4-5 minutes on each side until they're golden brown and cooked through. Remove from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and garlic. Sauté for about 2-3 minutes until the onion is translucent.

        Cook Orzo: Add the orzo to the skillet and stir it with the onion and garlic for about 1 minute. Then pour in the chicken broth and bring to a gentle simmer.

          Add Vegetables: Once it starts to simmer, stir in the cherry tomatoes and spinach. Cook for about 5-7 minutes, stirring occasionally, until the orzo is al dente and most of the broth is absorbed.

            Create the Sauce: Stir in the heavy cream and Parmesan cheese until well combined. Allow it to cook for an additional 2 minutes until the mixture thickens slightly.

              Combine Everything: Return the seared chicken thighs to the skillet, nestling them into the orzo. Cook for another 2-3 minutes on low heat to meld the flavors together.

                Garnish and Serve: Remove from heat and garnish with fresh basil leaves. Serve hot, ensuring each plate gets a piece of the delicious chicken and plenty of orzo.
