1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

½ cup buttermilk

Zest of 1 lime

¼ cup fresh lime juice

½ cup tequila (optional)

1 teaspoon coarse sea salt (for garnish)

Lime wedges and extra zest (for decoration)

Instructions
 

Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.

    In a medium bowl, mix together flour, baking powder, baking soda, and salt.

      In a large bowl, beat the softened butter and sugar until it’s light and fluffy.

        Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Gradually add the flour mixture to the wet ingredients, alternating with buttermilk. Mix until just combined.

            Fold in lime zest, lime juice, and tequila if using, until well incorporated.

              Divide the batter evenly among the cupcake liners, filling each about ⅔ full.

                Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let them cool completely.

                  For a fun finishing touch, sprinkle coarse sea salt on top of the cooled cupcakes and garnish with lime wedges and zest before serving.
