Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 cup cream cheese, softened

¾ cup sugar

1 teaspoon vanilla extract

2 large eggs

1 cup pureed mango

2 tablespoons lime juice

Zest of 1 lime

Whipped cream for topping (optional)

Fresh mango slices and lime wedges for garnish (optional)

Instructions
 

Preheat your oven to 325°F (160°C).

    In a medium bowl, mix the graham cracker crumbs with melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

      In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract, mixing until creamy.

        Add the eggs one at a time, mixing well after each addition. Stir in the mango puree, lime juice, and lime zest until fully incorporated.

          Pour the cheesecake mixture over the prepared crust in the springform pan.

            Bake in the preheated oven for 50-60 minutes, until the center is set (it may slightly jiggle).

              Once baked, turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool gradually.

                Remove from the oven and refrigerate for at least 4 hours or overnight for best results.

                  Before serving, top with whipped cream, fresh mango slices, and lime wedges if desired.
