Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup sugar

1/2 cup unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

1/2 cup mango puree

1 can (12 ounces) evaporated milk

1 can (14 ounces) sweetened condensed milk

1 cup heavy cream

1/2 teaspoon ground cardamom

Fresh mango pieces and mint leaves for garnish

Instructions

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

In a bowl, whisk together flour, baking powder, baking soda, and salt.

In a separate mixing bowl, cream sugar and butter until light and fluffy.

Add eggs one at a time, mixing well after each addition followed by vanilla extract and mango puree.

Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Pour the batter into the prepared cake pan and bake for 25–30 minutes or until a toothpick inserted comes out clean.

In a bowl, whisk together evaporated milk, sweetened condensed milk, and ground cardamom until smooth.

Once the cake is baked and cooled, poke holes all over the top using a skewer or fork.

Pour the milk mixture evenly over the cooled cake, allowing it to soak for at least 1 hour or overnight in the refrigerator.

Before serving, whip heavy cream and spread it over the top of the cake.

Decorate with fresh mango pieces and mint leaves for a vibrant touch.
