1 ½ cups graham cracker crumbs

1/4 cup sugar

1/2 cup unsalted butter, melted

16 oz cream cheese, softened

1 cup sugar

1 teaspoon vanilla extract

3 large eggs

1 cup mango puree (fresh or canned)

1/4 cup whipped cream (for topping)

Fresh mango slices (for garnish)

Mint leaves (optional)

Instructions
 

Preheat oven to 325°F (163°C). In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan to form the crust.

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in 1 cup sugar and vanilla extract, mixing until well combined.

      Add the eggs, one at a time, mixing well after each addition. Stir in the mango puree until the mixture is smooth.

        Pour the cheesecake batter over the crust in the springform pan.

          Bake for 55-60 minutes or until the center is set and the edges are lightly browned. The center may still have a slight jiggle.

            Turn off the oven and leave the cheesecake inside for another hour. Then, cool at room temperature before refrigerating for at least 4 hours, preferably overnight.

              Once chilled, remove from the springform pan. Top with whipped cream, fresh mango slices, and mint leaves if desired before serving.
