6 large eggs

1 cup spinach, chopped

1/2 cup bell peppers, diced

1/2 cup cherry tomatoes, halved

1/2 cup cheddar cheese, shredded

1/4 cup onion, finely chopped

Salt and pepper to taste

Olive oil spray or muffin liner

Instructions
 

Preheat the oven to 350°F (175°C). Spray a muffin tin with olive oil or line with muffin liners.

    In a large mixing bowl, crack the eggs and whisk them until well beaten.

      Add the chopped spinach, diced bell peppers, halved cherry tomatoes, shredded cheese, and finely chopped onion to the bowl. Season with salt and pepper. Mix well.

        Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

          Bake in the preheated oven for 20-25 minutes or until the egg muffins are fully set and a toothpick inserted in the center comes out clean.

            Allow to cool for a few minutes, then carefully run a knife around the edges to release the muffins. Enjoy warm or let cool completely to store in the refrigerator.
