Ingredients

8 oz cream cheese, softened

½ cup unsweetened cocoa powder

½ cup powdered erythritol (or sweetener of choice)

½ cup unsalted butter, melted

1 tsp vanilla extract

Pinch of salt

Optional toppings: crushed nuts, shredded coconut, or sugar-free chocolate chips

Instructions

In a mixing bowl, combine the softened cream cheese and melted butter, and blend until smooth.

Gradually add the powdered erythritol while mixing continuously to avoid lumps.

Sift in the unsweetened cocoa powder and add the vanilla extract and salt; mix until everything is well-combined and smooth.

Line an 8x8 inch baking dish with parchment paper for easy removal of the fudge later.

Pour the fudge mixture into the lined baking dish, spreading it evenly.

Optional: Sprinkle your choice of toppings over the fudge before it sets.

Refrigerate for at least 2 hours or until firm.

Once set, lift the fudge out of the dish using the parchment paper and cut it into squares.

Enjoy your indulgent, low carb dessert!
