Ingredients
  

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup whole milk

4 large eggs

2 teaspoons baking powder

1 teaspoon vanilla extract

1 teaspoon lemon zest

½ teaspoon salt

1 cup lemon pie filling (store-bought or homemade)

Powdered sugar for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch sheet cake pan.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.

        In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the creamed mixture, alternating with the milk, starting and ending with the flour.

          Pour the batter into the prepared sheet cake pan and smooth the top with a spatula.

            Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

              Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

                Once cooled, spread the lemon pie filling evenly over the top of the cake.

                  For added sweetness, dust with powdered sugar before serving, if desired.
