Ingredients
  

1 ½ cups graham cracker crumbs

¼ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup sugar

3 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

½ cup fresh lemon juice

1 cup fresh raspberries (or raspberry puree)

¼ cup powdered sugar (for sweetness to the raspberries)

Instructions
 

Preheat your oven to 325°F (160°C).

    In a mixing bowl, combine graham cracker crumbs and melted butter until well blended. Press the mixture into the bottom of a 9-inch springform pan to create the crust.

      In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.

        Add the eggs one at a time, mixing well after each addition.

          Stir in the vanilla extract, lemon zest, and lemon juice until fully incorporated.

            In a separate bowl, mash the raspberries and mix them with powdered sugar to enhance their sweetness.

              Pour the cream cheese mixture into the crust, then dollop the raspberry mixture on top. Use a knife or a skewer to swirl the raspberry into the cheesecake mixture for a marbled effect.

                Bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly.

                  Remove from the oven and let it cool at room temperature. Refrigerate for at least 4 hours, preferably overnight, before serving.
