Lemon Raspberry Swirl Cheesecake

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup sugar

16 oz cream cheese, softened

¾ cup sugar

1 tsp vanilla extract

3 large eggs

Zest of 2 lemons

½ cup sour cream

½ cup fresh raspberries

2 tbsp raspberry jam

1 tbsp lemon juice

Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.

    In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press this mixture into the bottom of the prepared pan to form a crust.

      In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add ¾ cup sugar and vanilla, mixing well.

        Add the eggs one at a time, mixing until just combined. Be careful not to overbeat.

          Stir in the lemon zest, sour cream, and lemon juice until smooth.

            Pour the cream cheese mixture into the crust-prepared pan.

              In a small bowl, mash the fresh raspberries with raspberry jam. Drop spoonfuls of the raspberry mixture onto the cheesecake batter, and use a knife to swirl it gently through the batter.

                Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.

                  Turn off the oven and let the cheesecake cool in the oven with the door slightly open to prevent cracking.
