Ingredients
  

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

2 large eggs

3/4 cup granulated sugar

2 tablespoons fresh lemon juice

Zest of 1 lemon

1/2 teaspoon vanilla extract

1/2 cup fresh raspberries (plus extra for garnish)

Powdered sugar (for dusting)

Instructions
 

Preheat your oven to 375°F (190°C) and prepare a madeleine pan by greasing it lightly.

    In a bowl, whisk together the flour, baking powder, and salt; set aside.

      In another bowl, beat the eggs and granulated sugar until pale and fluffy.

        Stir in the melted butter, lemon juice, lemon zest, and vanilla extract until well combined.

          Gradually mix in the dry ingredients until just incorporated, then gently fold in the raspberries.

            Spoon the batter into the madeleine pan, filling each mold about 3/4 full.

              Bake for 10-12 minutes, or until the edges are golden and the centers spring back when touched.

                Allow to cool slightly before removing from the pan. Dust with powdered sugar and garnish with additional raspberries if desired.
