Ingredients
  

1 cup all-purpose flour

2 tablespoons poppy seeds

1 tablespoon baking powder

1/2 teaspoon salt

1 tablespoon sugar

1 cup milk

1 large egg

2 tablespoons melted butter

Zest of 1 lemon

Juice of 1 lemon

Optional: Maple syrup or fresh berries for serving

Instructions
 

In a large mixing bowl, combine the flour, poppy seeds, baking powder, salt, and sugar.

    In another bowl, whisk together the milk, egg, melted butter, lemon zest, and lemon juice until well blended.

      Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are fine.

        Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

          Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

            Repeat with the remaining batter, adjusting heat as necessary.

              Serve warm with maple syrup or fresh berries.
