Ingredients

4 boneless, skinless chicken breasts

1/4 cup fresh lemon juice

1/4 cup olive oil

2 cloves garlic, minced

2 tablespoons capers, rinsed and drained

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for serving)

Instructions

In a mixing bowl, whisk together lemon juice, olive oil, minced garlic, capers, oregano, basil, salt, and pepper.

Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes to marinate.

Preheat the grill to medium-high heat. Remove the chicken from the marinade, discarding the remaining marinade.

Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).

Remove the chicken from the grill and let it rest for a few minutes. Slice the chicken and arrange it on a serving platter.

Drizzle any remaining juices from the grill over the chicken, and garnish with freshly chopped parsley and lemon slices.

Serve warm and enjoy your delicious Lemon Herb Grilled Chicken Piccata.
