1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 ½ teaspoons baking powder

¼ teaspoon salt

Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.

    In a bowl, cream together the softened butter and sugar until light and fluffy.

      Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

        In a separate bowl, whisk together the flour, baking powder, and salt.

          Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, mixing just until combined.

            Fold in the lemon zest and lemon juice until evenly distributed.

              Pour the batter into the prepared cupcake liners, filling them about 2/3 full.

                Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

                  Allow the cupcakes to cool completely before frosting.

                    Cream Cheese Frosting Instructions:

                      In a mixing bowl, beat the cream cheese and butter together until smooth and creamy.

                        Gradually add in the powdered sugar, mixing until fully incorporated, then add lemon juice and vanilla.

                          Continue to beat until the frosting is fluffy and spreadable.

                            Frost the cooled cupcakes with the cream cheese frosting using a spatula or piping bag.
