Ingredients
  

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup milk

2 teaspoons lemon zest

2 tablespoons lemon juice

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

Cream Cheese Frosting:

8 oz cream cheese, softened

¼ cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

Instructions
 

Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.

    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Beat in the eggs, one at a time, mixing well after each addition.

        Stir in the milk, lemon juice, and lemon zest. Mix until combined.

          In another bowl, whisk together the flour, baking powder, baking soda, and salt.

            Gradually add the dry ingredients to the wet mixture, stirring until just combined.

              Pour the batter into the prepared cupcake liners, filling each about 2/3 full.

                Bake for 18-20 minutes, or until a toothpick comes out clean. Allow cupcakes to cool completely.

                  For the cream cheese frosting, beat the softened cream cheese and butter together until smooth.

                    Gradually add in powdered sugar, mixing until well incorporated, then add vanilla extract and lemon juice.

                      Frost the cooled cupcakes with the cream cheese frosting and decorate as desired.
