Lemon Chicken Romano

Ingredients
  

4 boneless, skinless chicken breasts

1 cup grated Romano cheese

1 cup all-purpose flour

2 large eggs, beaten

1 cup bread crumbs

1/4 cup fresh lemon juice

1/2 cup chicken broth

1/4 cup olive oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Begin by seasoning the chicken breasts with salt and pepper.

      Set up a breading station: have three shallow bowls ready—one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Romano cheese.

        Dredge each chicken breast in flour, shaking off the excess.

          Dip the floured chicken into the beaten eggs, ensuring it’s well coated.

            Finally, coat the chicken with the breadcrumb and cheese mixture, pressing firmly so it sticks.

              In a skillet, heat olive oil over medium heat. Cook the chicken for 4-5 minutes on each side until golden brown.

                Transfer the chicken to a baking dish and drizzle with lemon juice and add chicken broth in the bottom of the dish.

                  Bake in the preheated oven for 20-25 minutes, or until chicken is cooked through.

                    In the meantime, in the same skillet, sauté garlic until fragrant, then remove from heat.

                      Once chicken is done, pour the garlic mixture over it and garnish with fresh parsley before serving.
