Ingredients
  

1 lb boneless, skinless chicken thighs (or breasts), chopped

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 cup orzo pasta

4 cups chicken broth

1 medium lemon (zest and juice)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1 cup baby spinach

½ cup cherry tomatoes, halved

¼ cup parmesan cheese, grated

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chopped chicken and cook for about 5-7 minutes until browned on all sides. Season with salt and pepper. Remove the chicken from the pot and set aside.

    In the same pot, add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the orzo pasta to the pot, stirring well to coat it with the oil and aromatic mixture. Toast the orzo for about 2 minutes.

        Pour in the chicken broth, lemon zest, lemon juice, thyme, oregano, and return the chicken to the pot. Bring to a boil, then reduce the heat and let it simmer for about 10-12 minutes, or until the orzo is cooked al dente and has absorbed most of the liquid.

          Stir in the baby spinach and cherry tomatoes, cooking for another 2-3 minutes until the spinach has wilted. Remove from heat.

            Before serving, sprinkle the grated parmesan cheese over the dish and mix gently. Garnish with chopped parsley for an extra burst of flavor.
