Ingredients
  

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk

3 large eggs

Zest of 2 lemons

½ cup fresh lemon juice

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 ½ cups fresh blueberries

Powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest and lemon juice.

        In another bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.

            Gently fold in the fresh blueberries, being careful not to over-mix.

              Pour the batter into the prepared baking pan and smooth the top with a spatula.

                Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

                  Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

                    Once cooled, dust with powdered sugar and slice to serve.
