Ingredients
  

1 cup almond flour

1 cup rolled oats

1/2 cup coconut sugar

1/4 cup maple syrup

1/4 cup coconut oil (melted)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Zest of 1 lemon

1 tablespoon lemon juice

1 cup fresh or frozen blueberries

1 teaspoon vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large bowl, mix together almond flour, rolled oats, coconut sugar, baking powder, baking soda, and salt until well combined.

      In another bowl, whisk together the melted coconut oil, maple syrup, lemon zest, lemon juice, and vanilla extract.

        Pour the wet ingredients into the dry ingredients and stir until combined.

          Gently fold in the blueberries, being careful not to break them.

            Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them a couple of inches apart.

              Bake for 12-15 minutes, or until the edges are slightly golden.

                Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
