1 cup cottage cheese

6 large eggs

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/2 cup chopped spinach

1/4 cup chopped onion

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

Fresh herbs (optional, for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, whisk together the cottage cheese and eggs until well combined.

      Stir in the shredded cheddar cheese, diced bell peppers, chopped spinach, and chopped onion.

        Add the garlic powder, salt, black pepper, and paprika. Mix until all ingredients are evenly incorporated.

          Pour the mixture into a greased baking dish.

            Bake in the preheated oven for 30-35 minutes, or until the edges are golden and a knife inserted in the center comes out clean.

              Allow to cool slightly before slicing. Garnish with fresh herbs if desired.
