Ingredients
  

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup crushed pineapple, drained

½ cup fresh pineapple, diced

3 eggs

1 tbsp baking powder

1 tsp vanilla extract

½ tsp salt

1 cup coconut flakes (optional)

Whipped cream for topping

Fresh mint leaves for garnish

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

        In another bowl, combine the flour, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with the crushed pineapple. Mix until just combined.

            Fold in the diced pineapple and coconut flakes (if using). Pour the batter into the prepared baking dish.

              Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.

                Once cooled, spread whipped cream on top and garnish with fresh mint leaves and additional pineapple pieces. Serve chilled and enjoy your Juicy Pineapple Heaven Cake!
