Ingredients
  

4 boneless, skinless chicken breasts

4 oz cream cheese, softened

1/2 cup shredded cheddar cheese

1/2 cup diced jalapeños (fresh or pickled)

1/4 cup cooked and crumbled bacon

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (optional)

Olive oil for drizzling

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, crumbled bacon, garlic powder, onion powder, salt, and pepper. Mix until well combined.

      Carefully slice each chicken breast horizontally to create a pocket, being sure not to cut all the way through.

        Stuff each chicken breast with the jalapeño popper mixture, using toothpicks to secure if needed.

          Place the stuffed chicken in a baking dish and drizzle with olive oil. If using, sprinkle breadcrumbs on top for added crunch.

            Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Let the chicken rest for 5 minutes before slicing. Serve and enjoy!
