Ingredients

1 cup pastina (tiny pasta shapes)

4 cups homemade or low-sodium chicken broth

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 cup fresh spinach, roughly chopped

1 tablespoon olive oil

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil leaves for garnish

Instructions

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.

Add Broth and Herbs: Pour in the chicken broth and bring the mixture to a gentle simmer. Stir in the dried thyme, oregano, salt, and pepper.

Cook the Pastina: Once the broth is simmering, add the pastina. Cook according to the package instructions, usually about 5-7 minutes, until the pasta is al dente.

Incorporate Spinach: Stir in the chopped spinach and let it wilt for about 2 minutes.

Serve: Ladle the soup into bowls and top with grated Parmesan cheese and fresh basil leaves for garnish. Adjust seasoning with salt and pepper if necessary.
