2 boneless, skinless chicken breasts

1 teaspoon Italian seasoning

1 teaspoon garlic powder

Salt and black pepper, to taste

1 tablespoon olive oil

4 slices of ciabatta bread or focaccia

4 slices of fresh mozzarella cheese

1 cup baby spinach

1/2 cup roasted red peppers, sliced

1/4 cup pesto sauce

Balsamic glaze, for drizzling (optional)

Prepare the Chicken: Season the chicken breasts with Italian seasoning, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until fully cooked and golden brown. Remove from heat and let rest for a few minutes before slicing thinly.

    Assemble the Panini: Preheat a panini press or a skillet on medium heat. Take two slices of ciabatta bread and spread pesto sauce on one side of each slice. Layer with sliced chicken, fresh mozzarella, baby spinach, and roasted red peppers. Top with another slice of bread, pesto side down.

      Grill the Panini: Place the assembled sandwich in the panini press or skillet. If using a skillet, press down with a spatula. Cook for about 4-5 minutes or until the bread is crispy and the cheese is melted. If using a skillet, flipping the sandwich halfway through ensures even grilling.

        Serve & Enjoy: Once ready, remove the panini from the heat and let it cool for a minute. Drizzle with balsamic glaze for added flavor (if desired) and slice in half before serving.
