Ingredients
  

2 cups long-grain rice

1 pound boneless, skinless chicken thighs or breasts

1 medium onion, diced

3 cloves garlic, minced

2 cups chicken broth

1 can (15 oz) diced tomatoes, undrained

1 cup frozen peas and carrots mix

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: Turn on the Instant Pot and set it to the 'Sauté' mode. Add olive oil and allow it to heat. Sauté the diced onion until translucent, about 3-4 minutes. Add garlic and sauté for another 30 seconds until fragrant.

    Brown the Chicken: Season the chicken with salt, pepper, and paprika. Add the chicken to the pot, browning it on all sides, about 5-6 minutes.

      Combine Ingredients: Stir in the rice, chicken broth, diced tomatoes (with their juices), dried thyme, and frozen peas and carrots. Ensure everything is well combined.

        Pressure Cook: Close the lid of the Instant Pot and ensure the valve is set to 'Sealing'. Select 'Manual' or 'Pressure Cook' and set the timer for 10 minutes.

          Natural Release: Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then carefully move the valve to 'Venting' to release any remaining pressure.

            Fluff and Serve: Open the pot, fluff the chicken and rice with a fork, and adjust seasoning if necessary. Garnish with chopped parsley before serving.
