Ingredients
  

2 lbs beef chuck, cut into 1-inch cubes

4 cups beef broth

4 medium carrots, sliced

3 medium potatoes, diced

1 medium onion, chopped

3 cloves garlic, minced

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

2 tbsp olive oil

1 bay leaf

Instructions
 

Sauté the Beef: Set your Instant Pot to the 'Sauté' mode and heat the olive oil. Add the beef cubes and brown them on all sides. Remove and set aside.

    Sauté the Veggies: In the same pot, add the chopped onion and minced garlic. Sauté until they are translucent.

      Deglaze the Pot: Stir in the tomato paste and Worcestershire sauce, scraping up any browned bits from the bottom of the pot.

        Add Ingredients: Return the beef to the pot, followed by the carrots, potatoes, beef broth, thyme, rosemary, bay leaf, salt, and pepper.

          Pressure Cook: Close the lid and set the Instant Pot to 'Pressure Cook' on high for 35 minutes.

            Release Pressure: Once cooking is complete, allow the pot to naturally release pressure for 10 minutes, then perform a quick release for any remaining pressure.

              Finishing Touch: Remove the bay leaf, taste and adjust seasoning if necessary. Serve hot and enjoy!
