2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup sugar

1 (8 oz) package cream cheese, softened

1/2 cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup sour cream

2 cups fresh blueberries

1 tbsp cornstarch

Zest of 1 lemon

1/4 cup brown sugar

1 cup oats

1/2 tsp cinnamon

Preheat Oven: Preheat your oven to 350°F (175°C).

    Make the Crust: In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix well and press into the bottom of a greased 9-inch springform pan. Bake for 10 minutes and let cool.

      Prepare the Blueberries: In a small bowl, toss the blueberries with cornstarch and lemon zest. Set aside.

        Make the Filling: In a large mixing bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add vanilla extract and mix well. Incorporate the eggs, one at a time, and then blend in the sour cream until fully combined.

          Layer the Blueberries: Pour half of the cheesecake mixture over the cooled crust. Gently add half of the blueberries on top, followed by the remaining cheesecake mixture. Finish by layering the rest of the blueberries.

            Make the Crumble Topping: In another bowl, combine oats, brown sugar, cinnamon, and any remaining graham cracker crumbs. Drizzle with melted butter and mix until crumbly. Sprinkle the topping over the cheesecake.

              Bake: Bake the cheesecake for 45-50 minutes or until the center is set but still slightly jiggly.

                Cool and Chill: Allow the cheesecake to cool in the pan for 1 hour before transferring to the refrigerator. Chill for at least 4 hours or overnight for best results.
