Ingredients
  

1 lb boneless, skinless chicken thighs, diced

1 cup jasmine rice

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

1/2 cup hot honey (store-bought or homemade)

2 cups broccoli florets

1 red bell pepper, diced

1 avocado, sliced

1/4 cup chopped green onions, for garnish

1 tablespoon sesame seeds, for garnish

Lime wedges, for serving

Instructions
 

Prepare Rice: In a medium saucepan, combine jasmine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until rice is cooked and fluffy. Set aside.

    Season Chicken: In a bowl, toss the diced chicken with garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.

      Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken to the pan and cook for about 6-8 minutes until golden brown and cooked through. Pour in the hot honey and toss to coat. Cook for an additional 2 minutes, allowing the honey to caramelize slightly.

        Sauté Vegetables: In the same skillet, add broccoli florets and red bell pepper. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp. Remove from heat.

          Assemble Bowls: In serving bowls, layer the cooked jasmine rice, followed by the hot honey chicken and sautéed vegetables. Top with sliced avocado, chopped green onions, and sesame seeds.

            Serve: Squeeze fresh lime juice over the bowls before serving for an extra zing. Enjoy!
