Ingredients
  

2 medium butternut squashes

2 tablespoons olive oil

1 teaspoon honey

Salt and pepper to taste

2 cups cooked chicken, shredded

1 teaspoon garlic powder

1 teaspoon dried thyme

1/2 cup chopped pecans (optional)

1/2 cup shredded cheese (cheddar or mozzarella)

Fresh parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    Cut the butternut squashes in half lengthwise and scoop out the seeds.

      In a small bowl, mix olive oil, honey, salt, and pepper. Brush this mixture on the cut sides of the butternut squash.

        Place the squash halves cut side down on a baking sheet and roast for about 25 minutes, or until tender.

          While the squash is roasting, combine shredded chicken, garlic powder, dried thyme, and chopped pecans in a bowl.

            Once the squash is done, turn them over and fill each half with the chicken mixture. Top with shredded cheese.

              Return to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.

                Garnish with fresh parsley before serving. Enjoy your delicious stuffed squash!
