Ingredients
  

1 pound chicken breast, cut into bite-sized pieces

1/4 cup honey

1/4 cup soy sauce

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground ginger

1/2 teaspoon black pepper

1 bell pepper, cut into chunks

1 onion, cut into chunks

Skewers (soaked in water if wooden)

2 cups cooked rice

Optional: sesame seeds and green onions for garnish

Instructions
 

In a mixing bowl, whisk together honey, soy sauce, minced garlic, olive oil, ground ginger, and black pepper to create the marinade.

    Add the chicken pieces into the marinade, making sure they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

      Preheat the grill or oven to medium heat.

        Thread marinated chicken, bell pepper, and onion onto the skewers, alternating between the chicken and vegetables.

          Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

            Serve hot over a bed of cooked rice, garnished with sesame seeds and chopped green onions if desired.
