Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

½ cup sour cream

¾ cup brown sugar

1 tablespoon cinnamon

½ cup chopped pecans (optional)

½ cup honey

Instructions
 

Preheat your oven to 325°F (160°C).

    In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed. Press this mixture firmly into the bottom of a springform pan to create the crust. Bake for 10 minutes and set aside to cool.

      In a large bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, mixing well after each addition.

        Stir in the vanilla extract and mix until well combined.

          Add the eggs one at a time, mixing on low speed after each addition until just blended.

            Fold in the sour cream until the mixture is smooth. Pour the cheesecake filling over the cooled crust.

              In a small bowl, mix together the brown sugar, cinnamon, and chopped pecans (if using). Sprinkle this mixture over the cheesecake filling.

                Use a knife to swirl the brown sugar mixture into the cheesecake softly.

                  Bake the cheesecake for about 60-70 minutes or until the edges are set but the center is slightly jiggly.

                    Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.

                      Remove the cheesecake from the oven and chill in the refrigerator for at least 4 hours (or overnight).

                        Drizzle with honey before serving, slice, and enjoy your delicious honey bun cheesecake!
