Ingredients
  

1 cup cream cheese, softened

1 cup heavy cream

½ cup sugar

¼ cup lemon juice (freshly squeezed)

Zest of 1 lemon

1 teaspoon vanilla extract

Pinch of salt

Optional: crushed graham crackers for topping

Instructions
 

In a large mixing bowl, beat the softened cream cheese until smooth.

    Add in the heavy cream, sugar, lemon juice, lemon zest, vanilla extract, and salt. Mix until all ingredients are well combined and the mixture is creamy.

      Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

        If desired, layer crushed graham crackers into the mixture for added texture.

          Transfer the ice cream to an airtight container and freeze for about 4 hours, or until firm.

            Scoop and enjoy! Garnish with additional lemon zest or graham crackers if desired.
