2 cups heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 cup cream cheese, softened

1/4 cup fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

Pinch of salt

Optional: crushed graham crackers for topping

Instructions
 

In a large mixing bowl, combine the cream cheese and sugar. Beat together until smooth and creamy.

    Stir in the heavy cream, whole milk, lemon juice, lemon zest, vanilla extract, and a pinch of salt. Mix until well combined.

      Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, typically about 20-25 minutes.

        Once churned, transfer the ice cream to an airtight container. If desired, layer in crushed graham crackers for a cheesecake effect.

          Freeze the ice cream for at least 4 hours or until firm.
