Ingredients
  

12 oz (340g) pasta of your choice

2 large red bell peppers

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

2 garlic cloves, minced

Salt and pepper to taste

Fresh basil for garnish

Instructions
 

Preheat your oven to 450°F (230°C).

    Cut the red bell peppers in half and remove the seeds. Place them skin-side up on a baking sheet and roast for about 20-25 minutes, or until the skins are charred and blistered.

      Remove the peppers from the oven and cover them with foil for 10 minutes. This will help loosen the skins.

        Once cooled, peel the skins off the peppers and place them in a blender with the heavy cream, garlic, salt, and pepper. Blend until smooth.

          In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside.

            In the same pot, heat the olive oil over medium heat. Pour in the blended roasted red pepper sauce and bring to a simmer.

              Stir in the cooked pasta and Parmesan cheese, tossing until everything is well combined.

                Serve hot, garnished with fresh basil and additional Parmesan if desired.
