Ingredients

8 oz whole wheat pasta

1 lb ground beef (preferably lean)

1 cup heavy cream

1/2 cup cottage cheese

1 cup spinach (fresh or frozen)

1/2 cup grated Parmesan cheese

2 cloves garlic (minced)

1 teaspoon Italian seasoning

Salt and pepper to taste

Olive oil for cooking

Instructions

Cook the whole wheat pasta according to the package instructions, then drain and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through.

Reduce heat and stir in the heavy cream, cottage cheese, and Parmesan cheese. Mix until the cheeses are melted and the sauce is creamy.

Add spinach, Italian seasoning, salt, and pepper. Cook until the spinach is wilted and everything is well combined.

Toss the cooked pasta into the skillet with the sauce, mixing until the pasta is evenly coated.

Serve hot, garnished with extra Parmesan cheese if desired.
