Ingredients
  

4 large eggs

1/2 cup cottage cheese

1/2 cup cooked black beans

1/2 cup diced bell peppers (red and yellow)

1/2 cup diced tomatoes

1/4 cup chopped spinach

1/4 cup shredded cheese (cheddar or mozzarella)

4 whole wheat tortillas

Salt and pepper to taste

Cooking spray or olive oil

Instructions
 

In a bowl, whisk the eggs and mix in the cottage cheese until well combined. Season with salt and pepper.

    Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil.

      Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are just set.

        Add the black beans, bell peppers, tomatoes, and spinach to the skillet. Stir until the vegetables are warmed through and mixed well with the eggs.

          Lay a tortilla flat on a plate and spoon a generous amount of the egg mixture into the center.

            Sprinkle shredded cheese on top of the filling, then fold in the sides of the tortilla and roll it up tightly.

              Repeat with the remaining tortillas and filling.

                For a crispy finish, place the burritos seam-side down in the skillet until golden, then flip to crisp the other side.

                  Slice in half and serve warm, adding salsa or avocado as desired.
