1 can (15 oz) chickpeas, drained and rinsed

2 cups romaine lettuce, chopped

½ cup cherry tomatoes, halved

¼ cup red onion, thinly sliced

¼ cup grated parmesan cheese (or nutritional yeast for a vegan option)

¼ cup Caesar dressing (store-bought or homemade)

4 large whole wheat tortillas or wraps

Salt and pepper to taste

Optional: Croutons for crunch

Instructions
 

In a large bowl, mash the chickpeas lightly with a fork or potato masher – you want a mix of whole and smashed for texture.

    Add the chopped romaine, cherry tomatoes, red onion, parmesan cheese, and Caesar dressing to the bowl. Mix well until everything is evenly coated.

      Season the mixture with salt and pepper to taste.

        Lay out the whole wheat tortillas on a flat surface. Spoon an equal amount of the chickpea mixture onto each wrap.

          Optional: Add a handful of croutons for extra crunch.

            Fold in the sides of the tortillas and then roll them up tightly from the bottom to the top to create a wrap.

              Cut the wraps in half and serve immediately, or wrap them in parchment paper for a quick lunch on the go!
